Chili Dusted Sweet Potatoes
Sweet potatoes are a great source of vitamin A, an antioxidant, along with fiber. Roasting sweet potatoes brings out their natural flavor. This recipes dusts the roasted potatoes with a combination of cinnamon, ginger and chili powder to give it a light kick! A little fat helps the body absorb fat-soluble vitamins such as vitamin A so drizzle with a small amount of extra virgin olive oil just before serving.
2 sweet potatoes, peeled and cut into 1 inch cubes
½ tsp chili powder
¼ tsp cinnamon
¼ tsp ground ginger
1 tbsp olive oil, plus more to drizzle before serving
Preheat oven to 400 degrees Fahrenheit.
Place sweet potatoes into a large bowl. Drizzle with olive oil and toss to coat. In a small dish combine the chili powder, cinnamon, ginger, salt and pepper. Sprinkle over the sweet potatoes and toss again. Spread onto a large baking sheet that has been coated with non-stick cooking spray. Bake for 25-30 minutes or until soft when pierced with a fork. Drizzle with extra olive oil before serving.
