A wonderfully bright and flavorful vinaigrette! This is my go-to salad dressing that never disappoints. The combination of lemon and herbs can really perk up the taste buds, especially if you are experiencing altered taste. Try this dressing on salad greens, vegetable salads, cooked vegetables (such as green beans or asparagus), potatoes and pasta. I like to drizzle it on roasted potatoes to add a little extra moisture and flavor!
½ cup lemon juice
1 tsp lemon zest
2 Tbsp Dijon mustard
1 teaspoon dried basil (or 1 Tbsp fresh)
1 teaspoon dried oregano (or 1 Tbsp fresh)
1 tsp black pepper, ground
1 tsp salt
½ cup extra virgin olive oil
In a medium size bowl mix together the lemon juice, zest, Dijon mustard, basil, oregano, salt and pepper. Once mixed, slowly add the olive oil while continuing to whisk until evenly blended.
