Skillet Squash with Mint and Feta
Quick and easy to make but packed with an unexpected flavor! Mint isn’t just for sweet dishes, here it pairs with feta cheese to enhance the flavor of sautéed squash. Add the mint during the last minute of cooking to allow the heat to help infuse the flavor into the squash.
2 cups squash, sliced
1 Tbsp olive oil
1 Tbsp mint, chopped
2 Tbsp feta cheese, crumbled
Dash salt and pepper
Heat olive oil in a large skillet over medium heat. Add squash and saute for 10-15 minutes, stirring frequently. Add the mint and cook about 30 seconds more, until fragrant. Remove from heat, sprinkle with salt,
pepper and feta cheese.
