Cheddar Pear Dutch Baby

The recipe is perfect for a budget-friendly meal featuring pantry and fridge staples such as eggs, milk, cheese and flour. Throw in a few fresh pears and you have a quick meal, full of flavor and fun to look at as it come out of the oven all puffed up!

Pairing sharp cheddar cheese (or in this recipe Seriously Sharp) with the sweet pears provides a nice flavor contrast.The pears actually carmelize a little bit in the bottom of the skillet. It is SO good!

I love the variety of cheese from Cabot Creamery - Mild Cheddar, Seriously Sharp Cheddar, and even Habanero Cheddar. My favorite for snacking is the Alpine Cheddar from their Legacy Collection. It is a Swiss and Italian Alpine blend that has almost a crumbly texture and nutty flavor, it is wonderful with fruit and nuts for a snack! All Cabot Cheddars are naturally aged, gluten-free and lactose-free.

I often buy several bars when they are on sale keep them in the freezer until I need them for a recipe or snack. Other budget friendly ideas, pantry staples and recipes can be found on Cabot Cheese website.



A few important notes about the recipe:

  1. Make sure the eggs, milk and cheese are at room temperature.

  2. Make sure the skillet heats in the oven for 20 minutes before filling with the batter. This, along with room temperature ingredients will produce the best rise of the pancake.

  3. Serve immediately - it will deflate. (That said, the leftovers, if any, heat up beautifully!)

Cheddar Pear Dutch Baby

Ingredients:

  • 2 pears

  • 3 large eggs, room temperature

  • 2/3 cup 2% milk, room temperature

  • 2/3 cup flour

  • Pinch of salt

  • 2 Tbsp butter

  • 1 cup shredded Seriously Sharp Cheddar Cheese

Instructions:

Heat oven to 450 degrees. While oven is heating, place a 10 inch cast-iron skillet on the middle rack of the oven for 20 minutes.

While oven is heating prepare the ingredients. Thinly slice the pears. (I used a mandoline but can slice with a knife if you don’t have one). Leave the peel on the pears - easier to slice and extra nutrition!

Combine the flour and pinch of salt in a medium bowl.

In a separate bowl beat the eggs and milk with a whisk or in a blender until well blended. Add the egg mixture to the flour mixture and whisk until smooth.

Remove the skillet from the oven and add the butter. Swirl to coat the bottom and sides of the skillet.

Lay the pear slices on the bottom of the skillet. Pour the batter over the pears and then sprinkle the cheese evenly over the batter.

Return the skillet to the oven and bake until puffed and golden brown, about 20 minutes.

Serve immediately.
